Karen,
Thanks for your yummy recipes. Do you or your readers have a clone of Cafe Rio's Cilantro Lime Vinaigrette
Dressing? That is my favorite and I would love to use it daily!
I found this online, but haven't tried it yet. If you decide to try it, let me know what you think and I'll post it, ok?
CILANTRO-LIME VINAIGRETTE
6 tablespoons oil (half olive, half vegetable)
1/4 cup chopped fresh cilantro
2 tablespoons lime juice
1 clove garlic, minced
1 small hot pepper, finely chopped (or to taste)
Salt and freshly ground black pepper
Combine all ingredients in small jar. Shake well and set aside
I am seriously addicted to this dressing, karen! Thanks!
This is incredibly delicious! I substituted plain yogurt for the mayo, to make it healthier. The dressing is a little thinner, but just as good!
