Best. Hummus. Ever.

BYU Creamery Salsa

When I was pregnant with Bennett, I craved fresh salsa. So Jeremy started picking some up from the BYU Creamery on 9th East (down the street from where we were living at the time), and it was so good! One day the cashier told him she'd noticed he was buying a lot, and he explained why. She said, “Stop buying it—I’ll email you the recipe!” And she did… and we've been enjoying it ever since!

BYU Creamery Salsa

5 lbs. tomatoes
1 onion, finely chopped
1 green bell pepper, chopped
1 anaheim pepper, finely chopped
1/3 red pepper, finely chopped
small bunch cilantro, chopped
1 tsp garlic powder
2 tsp pepper
2 tsp season salt (i.e. Lawry’s)
4 tsp salt
4 tsp lemon juice
1-2 jalapeƱos

Chop everything, combine, and enjoy! (Not as good the next day, FYI)

Buffalo Chicken Dip

Ummm, this is a really good recipe from my sister :o) Perfect for a Christmas or New Year's Party appetizer. I'm just sayin'...

Buffalo Chicken Dip
1 cube cream cheese, cubed
1 1/2 cups shredded chicken
1/2 cup Kraft Roka Blue Cheese dressing
1/2 cup buffalo wing sauce (I use Frank's)
2 stalks celery, finely chopped

Combine all ingredients. Put in microwave for 5 minutes, stirring occasionally, until cream cheese is melted and dip is warm. Serve with tortilla chips.

Cafe Rio Pico de Gallo

Pretty easy, but makes a big difference...

Cafe Rio Pico de Gallo
4 fresh tomatoes, chopped
1/2 white onion, chopped
1/4 bunch cilantro, chopped
2 cloves garlic, minced
1/2 tsp. lime juice
1 tsp. salt
1/2 tsp. pepper

Combine all ingredients and let sit for at least 1 hour. Best when served fresh (not as good the next day)...

Callie's Apple Dip

This is a new discovery this Fall! Our friend Callie brought this to an activity last week, and let's just say it was divine... The Heath chips make it, that's all I can say!


Callie's Apple Dip
8 oz. cream cheese
1/2 cup brown sugar
1/4 cup granulated sugar
1 tsp. vanilla
1/2 pkg. Heath chips (by the chocolate chips in grocery store)

Mix all ingredients together, preferably with a hand mixer to make it really smooth. Serve with crisp apple slices--Granny Smith, Fuji, Pink Lady apples all work well :o)

Pesto


Yum is all I have to say...





Quick, Easy & Delicious Pesto
3 packed cups fresh basil leaves (stems removed)
2 large fresh garlic cloves
1/2 cup pinenuts
3/4 cup packed fresh parsley
3/4 cup fresh grated parmesan cheese
1/2 cup olive oil
1/4 melted butter
salt to taste

Combine everything in a blender or food processor on low, then medium speed. Thoroughly work everything into a smooth paste. Toss with hot, drained pasta or spoon onto hot gnocchi. Also fantastic as a side to dip bread in...

*** I use this pesto recipe to make my Pesto Chicken Pasta.

Black Bean & Mango Salsa

This is the salsa that goes great with Garlic Lime Chicken. It’s also amazing by itself—just add a bowl of tortilla chips and prepare to be impressed. And addicted...


Black Bean & Mango Salsa
1 envelope Good Seasons Italian salad dressing mix
1 16-oz. can black beans, drained and rinsed
1 10-oz. package frozen white corn, thawed
1 cup chopped ripe mango
½ cup chopped red pepper
1/3 chopped red onion
1/3 cup chopped cilantro
¼ cup lime juice

Mix all ingredients until well blended; cover and refrigerate for at least one hour.
